Tofu and Vegetables

Rice Noodles with
Tofu and Vegetables
Chop the tofu, onions and garlic.c
Toss them into a pot with a little olive
oil over medium flame and add
whatever spices you happen to have.
Remove from the flame when the
tofu begins to stick to the pot.
Toss in spinach, basil, mint and
tomatoes until they reduce.
Add the mushrooms, green
peppers, broccoli, and cauliflower.
Remove it from the flame before the
vegetables get soggy..
Boil a few cups of water, remove
from the flame and stir in the rice
noodles.  Drain after about two
minutes and add a touch of oil and
some spices.
Eat.  Enjoy
