| Rice Noodles with Tofu and Vegetables |
| Toss them into a pot with a little olive oil over medium flame and add whatever spices you happen to have. |
| Remove from the flame when the tofu begins to stick to the pot. |
| Toss in spinach, basil, mint and tomatoes until they reduce. |
| Add the mushrooms, green peppers, broccoli, and cauliflower. |
| Remove it from the flame before the vegetables get soggy.. |
| Boil a few cups of water, remove from the flame and stir in the rice noodles. Drain after about two minutes and add a touch of oil and some spices. |
