Soak a sheet of rice
paper in luke-warm
water for a moment,
until it becomes soft
and rubbery.
Chop up some
vegetables and
slivers of tofu. This
particular tofu we
found in the Dalat
market. It has diced
vegetables mixed into
it and is delicious.
It takes a few
attempts to get the
knack of rolling a
good spring roll.
Avoid the temptation
to overstuff each roll,
and remember to
fold in the edges as
you roll it up.
To add a zesty flavor
to the spring rolls
create a dipping
sauce from soy
sauce, pepper,
chillis, olive oil and a
pinch of sugar.
