The cassette is the
cluster of gears on the
rear wheel.  Yes, there
on times when a cyclist
would need to take that
thing off.  Broken
spokes on the gear
side of the rear wheel is
one such example.  

The cassette is held in
place by a lock ring.  
This ring can be
removed with a lock
ring key and something
to hold the gears from
spinning backwards.  
Bike shops keep a
special tool called a
chain whip that does
just that, keeps the
gears from spinning.  
This chain whip weighs
a lot and is not a
practical tool to carry on
tour.  

Some innovative
entrepreneurs have
created products called
hypercrackers to do just
that.  We did not have
much success with the
Stein tool.
